I'd really like to try more than just salad and steamed veggies everynight. Any one have any good recipes to try?

Try cutting potato and cooking them in the oven to make potato chips or you can find potato chips in the frozen foods, I'd recommend Heinz Crincle Cut chips, ingredients; Vegetable oil, Potato and something else, but very tasty.1

I slice zucchini and squash thin, brush with olive oil, then coat in dry parmesean and grill in a non stick pan. Yummy! You can do the same with asparagus one it's softened by streaming.1

I use mashed avacado instead of mayo quite a bit. Much healthier! Spread thinly on a low carb wrap, add thinly sliced chicken breast, Romain, sliced red onions and sprinkle with garlic powder if desired. It's also good with turkey and roast beef. Extra protein by mixing a laughing cow low fat soft cheese wedge.0

I tried this tonight: Pea, millet, and mint fritters, using home made low-fat ricotta and brown rice rather than millet, and it was very nice. We just had the fritters and spinach (lots of spinach, 500 grams to start with), but only served two, for a 470 calorie dinner with 33 grams of protein.
In general for vegie recipes I like the following (not necessarily weight loss friendly, but learning to modify recipes is a great skill!):
How to Cook Everything Vegetarian by Mark Bittman. This one of my favourite cookbooks. What I particularly like is that Bittman really encourages modification and experimentation (which is how I cook in general anyway), so many recipes have suggestions for variations, or notes saying things like 'in this recipe X is really essential' so you know you can't just sub in Y.
Do be aware, though, that you may need to tweak some seasonings a bit and some of the recipes are a bit boring (but again, good as bases for variations).
If you are up for vegan cookbooks, Thug kitchen WARNING! Strong language (also check their recipes online here: Thug kitchen) and any of Isa Chandra Moscowitz' cookbooks (e.g. Veganomicon or Appetite for reduction) are also good (she also is online, at the Post-punk kitchen.
For blogs etc, a few that I go to for inspiration are: Smitten kitchen (not exclusively vegetarian, but most of her recipes are vego, also has a cookbook), Green Kitchen Stories (two or three cookbooks), Cookie and Kate (cookbook), The Garden Grazer, Oh She Glows (vegan, cookbook), Naturally Ella (cookbook), and Veg recipes of India (note, I generally modify these heavily to be lower in fat)1 -
Tonight I made a vegetarian stir fry- teaspoonful of coconut oil and fried courgette - cut into thin strips to make courgetti- with some sweet and baby corn - soya beans and pine nuts/seeds! Sprinkle some cayman pepper... I added some quorn sausage but that's optional. It was surprisingly yum! Quick and easy to make too1

I ate a cabbage wrap for lunch.. it was so good and super filling for only 360 calories!
Copied, pasted and cleaned up from my food diary...
Cabbage, red, raw, 1 leaf (used as a wrap)
Generic - Raw Shredded Carrot, 0.25 cup
Black Turtle Beans - Black Beans, Cooked, 0.25 cup
Peppers, sweet, red, raw, 0.13 cup, chopped
Hummus - Commercial, 0.5 cup
Green Onion - Green Onion Raw (Whole), 1 medium (15 g)
Fresh Express - Raw Spinach, 1 cups
Generic - Fresh Diced Cucumber, 0.25 cup
Kraft - Balsamic Vinaigrette Dressing, 2 Tbsp1 -
There are so many options besides just salads and steamed veggies. Meatless meatloaf made with lentils, lentil tacos, jackfruit bbq pulled "pork", tofu hummus wraps, saitan beef and broccoli stir fry, tofu stir fry, vegan chili made with vegan meat crumbles, vegan pizza made with vegan cheese. Veggie burgers, black bean burgers, alfrado sauce made with beans.1

We have also found that the Follow You Heart brand of vegan cheese is the best. As a former cheese addict it is the best in taste and texture when melted.
If you are wanting to kick up your protein intake, quinoa will become your best friend. Quinoa is rich in protein, omega 3's and iron. It cooks up just like rice and you can add anything to it to create a complete meal.1 -
