Cooked red cabbage recipes?

Hey, all!
I had dental surgery a little over a week ago, and am still on soft liquidy foods. That's fine, lots of options, but we also get a veggie box delivered every week. The past two weeks they've sent me red cabbage.
Tonight, I got brave and made a coleslaw in the blender- just whipped it into purple frothy mush with celery and red onion, and my homemade poppy seed dressing (nonfat yogurt, apple cider vinegar, lemon juice, celery & poppy seeds). And it's tasty and all, but.. it really doesn't look like something you want to eat. Kind of like someone put a purple muppet in the blender...
Anyone have an ideas what to do with the other five pounds worth of red cabbage that won't be hard to chew? Cuz, I'm outta ideas!

I think the stuffed cabbage roll and braised red cabbage will be soft to chew.. Its delicious too..0

Sweet and sour cabbage with apples. Red cabbage, apple cider vinegar, chopped apples and a little brown sugar or maple syrup. Just cook until nice and soft and should be limited chewing needed.0

My Cajun grandmother always smothered cabbage with lean pork and onions. Just cook it until it is very soft. She served it over rice.0

I wonder how the pork recipe would work with red cabbage instead of green- Can't imagine it would be pretty, but probably quite tasty!0

The best red cabbage I ever tasted was on a cruise. I asked the chef what he put in it and he wanted me to guess.
I swear I couldn't figure it out because it was a very subtle. He finally told me it was an ever so pinch of cinnamon. I was really shocked because cinnamon is a strong spice. I now saute it with a little wine, a dollop of butter and a pinch of cinnamon. Delicious.
