Unless you are already on a low carb diet, I suggest you buy, or borrow from a library "The new Atkins for a new you," read it and understand it, and apply it, and use MFP to keep score.
You're planning on losing 20% of your weight, so aim for 1-2lbs per week, be disciplined and patient. There's no reason not to see your goal.
    Good luck!

You could make eating fun like seeing what fruits and veggies keep your skin clean or make your hair grow longer and silly things like that

Do you workout? If yes - what, how much, what intensity?
MFP giving you 1200 cals for your height, weight and age would mean you've put quite the big weight loss expectation per week.

I'd recommend reading more about TDEE and BMR. (http://scoobysworkshop.com/calorie-calculator/)
I did a quick calculation for you, assuming you have no activity, your job is at a desk and it gave me your BMR at 1428 cal - meaning your absolute minimum to maintain health, get all nutrients; and your TDEE is at 1713cal - the calories you need to maintain your current weight. I wouldn't advise you to eat under your BMR, not to mention less than 1200 cal which is the absolute minimum for an average woman.

If you are finding it hard and stressful to get to even 1200, then I'd consider getting professional health as it sounds like you're developing some sort of an eating disorder.
