Trouble eating enough

Hi! I follow a low carb, high protein and fat diet. I don't use this diet long term, but while using it I've always found it difficult to actually EAT ENOUGH to fill my daily calorie needs so I don't compromise lean body mass. I'm not actually to lose weight, just burn fat while preserving and possibly building a little muscle.
I work nights, so during the day when I'm normally hungry, I'm sleeping. And sometimes when I'm working at night, I'm too busy to eat anything other than finger foods I can carry in my car with me.
Anyone have any advice or have a similar issue?

Generally on a high fat diet it should be easier to eat plenty because fat is more than double the calories per gram than carbs and protein. Drizzling olive oil onto food, cooking stuff in butter, adding unsweetened cocoa and double cream to coffee, enjoying some dark chocolate with peanut butter and adding cheese to omelettes are nice ways of upping calories.0

Eat the fat: butter, bacon, mayo, cheese, egg yolks, full fat dairy, dark meat chicken, steak, coconut oil, cream or half and half in your coffee, avocados, hummus.0

Do you have some medical reason for keeping your carbs so low? If not, I'd stop! I go for 25% protein and pay little attention to fat and carbs, and I've been very successful in losing fat and not only maintaining but gaining muscle. Barring some medical issue, your body needs all the macros!0

Go on a diet vacation? Stop tracking for a while if you feel you are not eating enough.
Don't track if you are trying to gain.0
