How can I make my protein muffins moister?

Sorry for using the word moist, I know some people hate it. :wink:

Anywho... I wanted to try making some protein muffins and they came out great aside that they are dry.
I'm wanting to keep them low carb so I didn't add banana or sugar to them.

Here is the recipe:
2 scoops whey protein powder
2 eggs
2 tbsp peanut butter
1/4 cup milk

Makes 6
99 calories each
3g carbs
4g fat
12g protein

They fluffed up quite nice but deflated a bit, kinda funny.
I didn't follow any recipe, just winged it with what I have in the kitchen.
The muffins are totally edible but a bit dry/plain.
Any low carb suggestions on what I could add or tweak to make them moist? (again, sorry)

    Applesauce maybe? I have no idea. I've given up on protein baked goods because they always turn too dry.

    Adding greek yogurt could increase the moistness, as well as add more protein. Could be a win-win.
    Carbonated water might help.
    Any other suggestion I can think of isn't low carb. Like mashed pumpkin, applesauce, or mashed banana.

    I love baking with protein. Whey has a tendency to dry out baked goods. To combat this I normally add a second flour (like oat flour or coconut flour) and add another liquid ingredient like greek yogurt, applesauce, pumpkin puree, or mashed bananas. In addition you need some sort of leavening agent like baking soda, baking powder, or eggwhites in the batter.

    I have a couple of good recipes for protein muffins, but none of them are low carb.

    Some have more oil. Or almond and coconut flour.

    Sorry if I sound ignorant, I am new at this...
    When making things with whey protein powder and greek yogurt for muffins how do you have any idea how much to put in of them and/or other ingredients and how long to bake them?? Sorry again to be annoying, I truly want to learn how to cook and bake healthy things but don't know where to start when it comes to experimenting with food.

    I look up other similar recipes and try them as is. Then I modify to get to the taste/texture that I want. I do that with any type of food I don't have experience cooking/baking.

    I'd give you practical tips on cooking with protein powder, but that's not really something I do.
