Low-ish calorie meats include ham, small steak, low fat hamburger meat, pork chops,
Try roasting / baking some veggies in the oven or on a grill: yellow squash, romaine lettuce, zucchini, green beans.
Google "roasting vegetables." Or buy something like a "Foreman Grill" or panini press.

I really like the Domestic Geek's You Tube channel. She does great meal prep ideas that include breakfast, snacks, lunches, soups, veggies, protein, etc. She also has a video for 3 sheet pan meals. It show 3 meals cooked entirely on one sheet pan. Google sheet pan suppers there are a lot of people doing this now. Easy meals with little clean up. I really liked the fajitas.

From a guy that has been cooking most of his own food...
    1. George Foreman grill is your friend. Chicken, steak, pork, veggies and even pineapple. Does magic stuff to food.
    2. Look for a farmer's market. They have lots of great grillable vegetables at far better than supermarket prices.
