Looking for some Vegetarian Recipes but....

I'm trying to find some good vegetarian recipes but I can't have eggs because I'm allergic sooooooooo does anyone have some ideas.

    Use ground flax seed/meal as an egg substitute... works amazingly well.

    Make your own salsa:
    Tomatoes
    Cilantro
    Lime
    Salt
    Pepper
    Chili
    Onion
    Garlic
    - Blend together

    Potato "Salad":
    Red potatoes, boiled and cubed
    Kalamata olives
    olive oil
    balsamic vinegar
    feta cheese
    - toss together, enjoy hot or cold (add dill or other herbs if desired)

    Mushroom caps:
    - take stems out of mushrooms and finely chop, add herbs (like basil), garlic, onion and sautee in pan - mix with cream cheese and stuff back into mushrooms - sprinkle with parmesan and bake until cheese is done and mushrooms are soft

    English muffin (whole wheat) toasted with strawberry jam and ricotta cheese - add strawberry slices on top if you want more fruit and drizzle with honey

    Whole wheat bread with peanut butter, honey, and strawberries

    1.5 cups juice
    1 cup fruit
    1 tbsp honey
    1 tsp vanilla
    - Blend and sprinkle with cinnamon for a yummy drink


    Hope those give you some other ideas besides "salad" and whatnot!

    I use EnerG Egg Replacer when I'm cooking for vegan friends. Its easy to use, you just mix it with water.

    I read a lot of food blogs. You might want to check out

    You beat me to it :) EnerG works really well, as does flax seed mentioned above.
    Most veg meat substitutes/protein sources don't contain any egg, so that's easy enough. Vegweb is a great place to start looking for recipies - google it.
