Polenta

I buy Bob's Red Mill corn grits also known as polenta. I eat it for breakfast mostly but I know folks who pay a lot for polenta in an Italian ristorante, and turn up their nose at grits.
Anyway, there are directions on the package which is more or less make grits, stir in butter and parmesan, serve with pasta sauce. Here is one from the NYT I think.
By the way, I use a double boiler.0 -
I love polenta with sautéed peppers and onions and goat cheese or with a red sauce and Parmesan. Also with an over easy egg. I buy it in the roll (they call it corn meal mush but it's the same thing) and it's much easier to use in layering all your favorite veggies or cheeses.0

They keep the tubes of polenta in the freezer section of my local market. You slice it into rounds then fry it.
Sometimes I'll make a double or triple batch and refrigerate the leftovers. In a couple hours, it sets and can be cut into squares and served like the tube stuff or frozen.
If you make this from coarsely ground corn it's better if you use stock or at least add some bouillon to the water.0 -
