I made Jamie Oliver Chilli con Veggie this week. Tasted amazing, worked out at 80p a (generous) serving and reheated extremely well.
Lunch wise, do you eat eggs? have you looked at the little mini frittatas? They can be eaten cold with loads of veg inside and are low in carbs.2 -
Vegetarian proteins tend to be paired with carbs. So learn to enjoy them together. Vegetarian foods that are higher in protein include:
Soy products like tofu and tempeh.
Seitan (wheat gluten).
Nuts (which also are high in fat).
Beans of all kinds.
Brewer's yeast.
Eggs, milk, yogurts, and cheese.
In your situation I'd make a home-made version of refried beans using water instead of oil for dinner, and wrap it up with cheese (or soy imitation cheese) for leftovers the next day.

I think I am going to put some chickpeas to soak now. As a student, you can economize by replacing the shallots with regular onion.1 -
You could check out skinnytaste.com. She has loads of recipes including vegetarian recipes. I love this site & use it a lot, but I'm not a vegetarian!1

Cottage cheese is a life saver. Sunflower seeds are high in calories and protein but low in carbs. Chobani yogurts are a perfect cheap snack.
Breakfast burritos but with more egg and less potato is a good meal prep plus some salsa and spinach.
Spin up some black bean chili and put on some rice chips or kale chips with some salsa and cheese.
Split a Tofu burrito from Chipotle and you have lunch and dinner for about $7 with a malt skim milk or soy milk.
Lots of stuff out there.

We have dinner leftovers for lunches pretty often.
Hard boiled eggs, deviled eggs, egg salad, omelet muffins
lettuce wraps
Cottage cheese
Hummus and veggies

1 onion ...crushed garlic ..coriander...half aubergine. ..1 courgette..handful mushrooms..1tsp sweetener powder...1tsp soy low sodium...half pint of hot water with whole veg stock cube...2 tomatoes..small pieces of broccoli....salt and pepper to taste...it's yummy and easy...:)1

You can use supercook, I love it very much. You can input the ingredients you have, what to restrict "like meat and poultry" and what type of dish do you want "for example Asian or mediterranean", and also what type of meal. It will get you all the recipes you can make. If you want something specific, you can use filters and tadaaa
