Help please! Winter is coming in nz I really need healthy slow cooker recipes please

    Chuck roast (from beef shoulder) was on sale this weekend so I'll soon be making barbacoa similar to this from Rick Bayless. I'll also make a traditional beef stew with cumin and poblano pepper. Couldn't find a recipe to link to but think regular beef stew with traditional veggies like potatoes onions, carrots, celery plus Poblano peppers. Seasoned with ground ancho peppers, cumin and coriander seeds.
    I usually just cook it in a dutch oven because my crock pot doesn't have the sear setting and I really want to brown the meat first, make a roux, then add back the beef with vegetables and stock or water.

    I love this cilantro-lime chicken. Great for tacos, or taco salad, there are other crockpot meal ideas on this blog as well.

    I have six small chix breasts w/ a bottle of Frank's wing sauce and a little honey in my crockpot right now! I shred it afterwards and use just a little of the remaining sauce since I don't like too spicy and sauce is high in sodium. I make my own blue chz dressing and eat it all in a whole wheat wrap w/ romain and rainbow slaw (undressed) or just on a pile of greens. Even my 11 yr old loves it and it's low cal/ low ingredients!

    I make salsa chicken a lot.

    1 c salsa
    1 can cream of x soup
    1 packet taco seasoning
    Chicken

    3-4 on high, 6-8 on low

    Shred and eat with Spanish rice, as a taco it burrito, in a quesadilla, makes really good soups..... possibilities seem endless
