Jenna's Tuna Sammies

This is one of my FAVORITE dinners..... (this is the super easy, quick version.... you can always use Ahi Tuna and fresh artichokes to impress friends) ;)

1 garlic clove (I use 2 tsps minced garlic)
salt
pepper
lemon juice
2tbsp EVOO
2 cans tuna, drained
1 14oz. can artichoke hearts drained and chopped
2 cups baby spinach, chopped
4 english muffins, split
(Optional: Provolone cheese slices)

Preheat broiler and place rack 5-6 inches from heat source. Combine EVOO, garlic, salt, pepper, and a squeeze of lemon juice. Add tuna and flake with fork. Add spinach and artichoke hearts and toss. Place english muffin halves on baking sheet and toast under broiler. Once golden, remove muffins and place heap of tuna salad on each muffin. Top tuna with a slice of provolone and return sammies to the oven to melt the cheese.

*by using fresh artichokes, and whole grain english muffins (these nutrion facts are based on generic, regular, white english muffins) you can reduce the sodium. :)

    Sammies?? That's so cute!!! We call them sammiches. This is an interesting mix of flavors. I'm definitely going to give it a try!

    Sounds yummy! What is EVOO? I have seen this on here numerous times and I have no idea what it is!
