Hi
I'm a bit bored of steamed broccolli and wondered if anyone had any recipes for other ways to cook it?

I'm sure it's lovely covered in cheese sauce, but I guess that's not great for the old diet...!0

If you have lots of it you can add some curry spices, ginger, lemongrass etc and make a nice soup : )0

1tbsp real butter
1/4 cup mozzarella cheese
1 small head of broccoli florettes
1 cup fresh spinach
1 grilled and seasoned chicken breast
Melt the butter, drop in the florettes in...mix until they're lightly coated...cook on very low until they're just warm...they should still be crunchy and nearly raw, except the little leaves. Cut the chicken breast into bite sizes pieces (you can shred it as well). Toss it with any recovered juices (I use a george foreman) from the cutting in with the broccoli. Increase heat slightly and stir. Add in the spinach and cook till it's just wilted...stir in the mozzarella until it barely melts, drop it all in a bowl and enjoy =D.
The broccoli stays virtually raw, so you're getting all of the benifits of it. The 1tbsp of butter adds flavor and seasoning, as does the seasonings on the chicken. All in all this is a far healthier dish than people would expect. There's times where I live off it =D.
I forgot to add, 366cal, 8g carb, 19g fat, and 38g protien.

no but it is really just a light toss maybe a tablespoon or two of olive oil and I always use fat free parm and you just put a bit on top not a ton lol0 -
Plain steamed may get a little boring I guess...I steam it then toss it in a heavy frying pan for a couple of minutes with 1 tablespoon of olive spread, chilli flakes, garlic granules and black pepper...makes a nice zingy change! It is also lovely with cheese sauce but those dang calories soon mount up!0

try making your cheese sauce with 2% milk sharp cheddar slice and skim milk OR fat free chicken broth. Start with 1 TBSP butter, melt it and stir in 1 TBSP flour. Cook for a few minutes to get rid of the raw flour taste. Then stir in the cheese slice and about 1/2 cup liquid. Add more liquid a little at a time until your sauce is the consistency you want. Cuts down on the fat content and still has yummy flavor.0

I love broccoli too- Here are a few suggestions:
Broccoli with cheese sauce- use a recipe similar to the above one OR melt down some extra low fat cream cheese & add some garlic/herbs.
Broccoli with ginger, chilli & soy sauce. Stir fry with the chopped fresh ginger & chilli- drizzle & toss in soy sauce.
Broccoli in roasted red pepper & tomato sauce with black olives (make your own sauce with roasted red bell peppers, garlic, herbs & tomatoes or use a shop bought low cal spaghetti sauce). Dust with parmesan, if you wish.
Broccoli in olive oil & lemon juice dressing
Broccoli Slaw- mix raw broccoli with chopped spring onions, shredded carrot & cabbage and make a dressing using low fat/fat free yoghurt, wholegrain mustard & lemon juice.0 -
I love broccoli with pesto. Steam or boil as usual then mix with a spoon of pesto.0
