In breadcrumbs seasoned with garlic, seasoning salt and oregano leaves, could it taste good?

I imagine it could. I am a huge salmon fan and wouldn't ruin it with breading though. A little lemon, maybe some garlic, salt, and pepper and skip the breadcrumbs.

I agree, probably would but I'm the same, I love it plain...absolutely LOVE the taste of it so I probably wouldn't try it myself.

I imagine it would be no different than breading chicken tenders and such and that tastes good breaded.

    Sure, it would taste good.

I would probably rather make a herb crust on top though - breadcrumbs (usually wholegrain because that's the bread I use), fresh herbs (probably thyme or parsley), nuts (walnuts or hazelnuts might be good with salmon), lemon zest.
I'd wizz them all together in my little food processor then add a bit of olive oil or lemon juice.
Then squish it all on top of the salmon fillets and bake it.

    Thx, everyone.
Should have added a little oil or juice.

It's great topped with chopped walnuts, garlic, parsley, salt, olive oil or butter and lemon zest! Kalamata olives in there if you like them, too. Breadcrumbs either get soggy or burn in my experience.
    Mix your topping.
Sear the fish in the iron skillet, apply topping, and cook it quick in a hot oven.

I've had it in a restaurant with horseradish panko and it was delish!
