I'm trying to find different ways to make chicken that will pair well with potatoes and veggies. :)

    I pan-grill a chicken breast, throw on a little salt and pepper and a smidge of ranch seasoning, then chop it up into bite-sized pieces and serve it over rice with a vegetable on the side, but you could easily sub the rice for potatoes! Doesn't take long to make, either! Always comes out with loads of juice and flavor. :)

    Boneless chicken thighs baked w;
    - olive oil
    - Fresh squeezed lemon
    - Oregano
    - Salt
    - Pepper
    - Garlic powder

    Or any kind of chicken baked in BBQ sauce, baked covered w foil to seal in moisture then cook uncovered on high for 10-15 min

    chicken baked with ras el hanout (can bake with potatoes and other veggies. Olives and shallots go well here, too)

    chicken with citrus marinade (orange and lime are great) then grilled, just don't marinate chicken too long, the acid in citrus can give a weird texture if left overnight.

    Mix up a table spoon of natural honey, 1/2 table spoon of whole grain mustard and 2 of light soy sauce. Cut a chicken breast into strips and dip in the sauce (marinate if you've planned ahead) and grill the strips. Works best on a salad but you could use veg.

    I take skinless chicken breasts and roll them in crushed Rice Krispies cereal and bake in the oven. Tastes like fried chicken only way better for you!

    Whole roasted chicken with salt and pepper cooked upside down ( breast at the bottom) long and slow in the oven until the meat falls off the bone . You can rub the flesh with other flavours like garlic and herbs or Piri Piri but sometimes plain is good.

    These are some I make ALL the time:

    Cucumber Chicken - kind of like chicken with tzatziki. I leave out the mayo and just use cooking spray instead of oil to lighten it up more. http://www.tasteofhome.com/recipes/cool-cucumber-chicken

    Sweet & Spicy Grilled Chicken. Personally I scale back the paprika in this to more of a teaspoon, but a batch of the rub is in a baggie in the fridge most of the time.
