600 cals should be pretty easy to find options for. 200 cals of protein, 200 cals of starch (pasta/rice/potato), 100 cals of vegetables leaves you an extra 100 cals for oils/butter, fruit, beverage, etc.

What kinds of foods do you cook for your family today? How old are your kids?

My favorite is Garlic Shrimp Pasta! Its delishes and a hefty serving is 510 calories. I just replace the regular pasta with veggie pasta and my daughter can not even tell the difference!

You can have almost any meal and be satisfied for 600 calories. Just cook some of the lighter dishes your kids like and eat an appropriate portion. Less spicy chili, stew, shepherd's pie with lots of veggies, soups, homemade leaner meat or chicken burgers, oven "fried" potatoes, various kinds of pasta (just have fewer meatballs and sauce or use leaner meat), the many ways to prepare chicken..etc.
