Anyone have a 'go to' recipe for chicken salad? Something with lots of flavor not just chicken & mayo?

I've never tried making it but there's a classic recipe in the UK called coronation chicken, it involves mayo, curry powder, mango chutney and sometimes sultanas and almonds. It's absolutely delicious, have a Google. It's a really popular sandwich filling here.1

I like to reduce the mayo by adding some plain greek yogurt. Then for crunch and variety I add celery, apples, craisens, some walnuts...2

I made the best chicken salad last night!
Lettuce
Tomatoes
Cucumbers
Red onion
Carrot
Chicken breast
Light sour cream
Balsamic Beetroot relish
Jalapeño2 -

Balsamic vinegar
Just a bit of olive oil
Chopped celery
Red grapes
Toasted pecans/ walnuts or almonds
Salt
Pepper
Garlic powder
(I usually add the olive oil first and then add the balsamic bit by bit and stir and taste... Add more if needed)
I worked at a deli in college and this was our biggest seller ;-)6 -

Yum! I wouldn't have ever thought of putting balsalmic vinegar in chicken salad. Can't wait to make this! Ty.

I use:
Baked chicken breast (cubed, not shredded)
Boiled eggs
Mayo (Just enough to glue it together and not leave it dry)
Olives
Barbecue sauce
Dijon Mustard
Paprika
Cilantro
Spring onions + a small sprinkle of onion powder
Lemon pepper
Lettuce
Tomatoes
Salt and pepper to taste
^ We just had this for lunch today! I absolutely love it. It's amazingly flavorful without being mayonnaise-y. This is important to me because my husband actually doesn't like mayo, but he does enjoy this chicken salad!1 -
I make potato salad with a vinaigrette instead of mayo because Mr. Garage doesn't like mayo, and sometimes I mix Greek yoghurt with the vinaigrette. It's good, quite light and fresh.0

My easy "recipe" is canned chicken, light mayo, celery, onion, pickles, hard boiled egg whites, avocado, salt and pepper. Sometimes I add some pasta too. Delicious!1

I make a chicken salad with roasted chicken, various roasted vegetables (whatever I have on hand), thin sliced red onion, a splash of umeboshi vinegar and olive oil.1

I just made this for dinner!
1lb boneless skinless chicken breast grilled and diced
1/2 bunch green onions diced
Handful of sliced almonds and dried cranberries
Garlic powder to taste
1/2 cup mayo
1/2 lemon squeezed into bowl
Salt pepper to taste
Mix it all up. Eat right away or allow to cool.
Generally I try to make this 3 servings so the macros aren't too bad. I don't mind the mayo. I think it's more satisfying to have the fat. I normally just eat this alone.

1LB. boneless skinless baked chicken
8oz. Plain Greek yogurt
1 Cup fine Diced Celery
1/2 Cup chopped Pecans
1/2 Cup Diced red onion
1 table spoon Italian seasoning
2 diced Jalapeño peppers
1 tablespoon tzatziki sauce
I find that mixing it all together and letting it sit over night works best.

This is my go to! You can use canned chicken, and of course, it doesn't have to be served on naan.
