Fast and Portable
My weight fluctuates directly in relation to the number of hours I work. The biggest issue is lack of time to prep meals. What are quick and portable meals? (Smoothies, lettuce wraps... etc).
The two big questions are: Can I eat it in the car and can I toss it in tupperware to eat 8 hours later (fridge available)?

Egg muffins are easy to eat in the car:

Kale salad (the leaves stand up to the dressing) and a can of soup. Massage the dressing into the kale leaves in the morning and put your salad adds on top (fruit, veggies, cheese...). Shake the container at lunch to mix. Empty your soup into a bowl and microwave. Easy and very healthy.0

You can pack in tupperware and/or mason jars then add a bottle of frozen water or two. They will keep things cold and you can drink the water when defrosted. Just be sure to open the water bottle and pour off a little before freezing.

Crockpot Shredded Chicken
Ingredients
2 lbs boneless, skinless chicken breast (about 4 large chicken breasts)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 cup chicken broth
1 tsp all purpose seasoning (such as Mrs. Dash) – if you cannot find this, you can replace with 1/2 tsp of oregano & 1/2 tsp of onion powder
Directions:
1. Place all ingredients into your crockpot and cook on HIGH for 3-4 hours or LOW for 5-6 hours. (These times are for fresh chicken. If you are using frozen, you will need to use the greater of the cooking times)

make into taco, bbq chicken wrap, chicken salad, mix with grains, freezes in portions for when you need it.0 -
Flatbread wrap, with meat of your choice (I use deli turkey), veggies like lettuce, cilantro, onions, avocado, a drizzle of dressing of your choice. Roll it up and put in baggie. It's easy to eat by hand and you don't need utensils or an over to heat it up.
