    I usually have a vegetable omelet. It really takes almost no time to make.

    I kinda like my breakfast fajita, but I'm trying to figure a way to keep it from dripping tomato juice on me while I eat it.

    Frittatas/egg muffins/quiche/egg bakes, hard boiled eggs, premade sausage patties, shakshouka, omelettes, bacon. I have about 3 mins to heat and eat so I prefer to warm something and go.

    MMM, avocado and a fried egg on toast.

    Alien pancake, Dutch pancake, there is a french word for it but I can't remember it - eggy batter into a hot iron skillet placed in a hot stove puffs up into a big puffy pancake thing, it's good either savory or sweet. Crepes are, too.
