Any recipes for pointed sweet peppers?

Any recipes for sweet pointed peppers, i've 4 big ones and would like to use them for tea tonight to go with a risotto. But can rearrange a more suitable meal if needed!

    I slice mine down the middle and stuff them with mozzarella cheese and then put them under the broiler until cheese melts being careful not to burn the peppers. Or bake them. Delicious!

    I make brown rice with onion and peppers cooked in it. I add canned crushed tomatoes after it is cooked and use this mixture to stuff the peppers with and put a little cheese on top. Clean out the peppers first so they are like a bowl that can be stuffed. Then put in veggie steamer and steam till soft or put in the oven in a pan with just a bit of water in the bottom and foil on top, till peppers are soft. If you can handle the calories, brown some hamburger meat first and then add water to it to cook your rice. That's yummy but I've been doing without the meet to save calories.

    Not a recipe, but these are lovely grilled over charcoal. A good use for the inevitable leftover heat after you've finished barbecuing. Let them cook until blackened and blistered, then take them off, cover and cool.when they're cool ,pull off the black skin. Lovely in all sorts of recipes. You can do it with any peppers but the big red pointy ones have a great flavour.
