Skinny Eton Mess

I've just had this for my pudding. Possibly the nicest pudding I've had since I've started eating healthy so I had to share it - even if it has been done before, people who havent seen it will see this new post.

To make for one:
6 medium strawberries halved.
1/2 meringue (you can use a whole one if you fancy!) crumbled
and a tablespoon of 0% greek yogurt.

To be honest I was a bit hasty cause I dont like pure greek yogurt, but I slightly squashed the strawberries first with a fork so some juices come out then when you mix it all together and the yogurt goes strawberry-ey!

Also if you do some smaller bits of meringue and some larger and mix it all together and leave it for 2/3 minutes the smaller bits dissolve and it tastes even sweeter but you still get crunch from the bigger bits. :smile:

It's delicious, and low fat and low cal. Go for it. Trust me!!! :)

    Oh yeah I have this all the time except I use Weight Watchers low fat thick cream or Quark no fat soft cheese mixed with sweetner. Lush :happy:
