have you googled it? I do low carb (not vegetarian) but i see a lot of vegetarian when i do that0

Yup..I did..i found some options..but our regular meal usually includes rice or wheat roti.. Even they have carbs..so curious to know what our fellow members are following..hope it is not a problem, and it may help others with similar question..0

I make cauliflower rice to replace my basmati. It doesn't soak up the sauces as good but it's better than nothing and adds a ton of vitamin C and other nutrients. You can also look up cloud bread or oopsie rolls and use them instead of naan bread. Any recipes that call for yogurt you can use a low carb full fat yogurt, full fat sour cream or add a little extra heavy whipping cream that's been whipped to thicken up your sauce. Or any combination of those that works for you! It will take some experimenting.2 -

We eat a lot of stir fries, soups, curries, noodled vegetables, vegetable "rice," and stuffed vegetables (spaghetti squash, portobello mushrooms, peppers, eggplant, zucchini boats, etc). Your carbs will likely be higher than someone else on a standard "low carb" diet, but they will still be much lower than the SAD.0

I make the stuffed spaghetti squash and zucchini boats as side dishes for my meat eating family and for my daughter and I they are the entire meal. Works out great if you are cooking for a mixed group. lol0

Cauliflower fried rice is really good, too, with some veggies and eggs and sesame oil. Depending on exactly how low carb you're looking to be you can add some edamame or tofu for extra protein.0 -
You could also substitute things like noodles with veggies sliced thinly. They make noodles from vegetables that you can boil. They taste like actual noodles.
I don't eat Indian food often but I eat semi-vegetarian meals (I eat fish, eggs, cheese, etc.) I try to keep my carbs low by keeping my veggies and protein high! So like a huge salad with grilled fish on the side .. or boilled eggs with a veggie pasta and tomatoes! Add me if you would like more ideas!0
