I love soup for a healthy food as it is easy to make and contains lots of veg. However the soups I eat are repetitive and I love ham hock soup but it is rather fatty and salty. Does anyone have any healthy soup recipes to try out. I don't eat dairy but apart from that I am open to anything. Thanks

    What's repetitive to you? Search for other soups.

    This is my favorite:

    Mexican Crockpot Soup

    Ingredients:
    1 Tbsp olive oil
    2 lbs boneless chicken breasts (I used three)
    1 ½ cups chopped red onion
    2 chopped red bell peppers
    chicken bone broth (amount depends on how soupy you like it)
    ¼ cup chopped cilantro
    1 Tbsp Cumin
    2 Tbsp (or more) chopped chipotle chile in adobo
    6 cloves of garlic, roughly chopped
    2 (28oz) fire roasted tomatoes
    1 (4 oz) chopped green chilies, undrained
    Salt and pepper
    ¼ cup chopped cilantro

    Instructions
    Heat a large skillet and brown the chicken in the olive oil.
    Add everything except the cilantro in the crockpot and stir it up
    Cook on low for 5 hours. Shred chicken and put it back in the pot. I add lots and lots of vegetables at this time (zucchini, cauliflower, green beans, spinach...) cook for another hour or so if you’re using fresh vegetables. If you’re using frozen, cook for an additional 5 minutes.

    I just eat vegetable soup, add the hard veggies first and boil them until they are soft then add the soft veggies and spices.

    One of my favorites is:
    Onions, carrots, and celery (to boil)
    Then add tomatoes, corn, peas (or really whatever you want)
    season with: basil, salt, pepper, lemon pepper and garlic salt

    I love putting lemon pepper in the soup but some people think its too spicy!

    If you want a thicker soup, add oatmeal. . I know it sounds totally gross but works wonders and doesn't taste gross at all! You can't taste oatmeal much and it's not sweet or salty.. It's like dipping bread in the soup, which most people do.

    Try smoked turkey neck....very tasty and exceptionally lean too
