Anyone have any good healthy blueberry recipes? I have a big bag in the freezer and would like to use them up but would like something tried and true. Thanks!

    Mix into Greek yogurt
    Eat them frozen(delicious)

    You could use all blueberries instead of the berry mix and it would still be very good.

    Nice recipe mskessler89, I tried strawberry as a sauce on pork but never thought of blueberry :)

    blueberries frozen or semi frozen with Kefir poured over them. YUM! Kefir is a probiotic. Sorta like liquid yogurt.

    Not sure if this is healthy enough for you, but makes for a nice treat... Blueberry pineapple dump cake
    3 cups blueberries (can be frozen)
    20 oz can pineapple tidbits in juice
    1/2 cup sugar
    1 box white/yellow cake mix
    1 1/2 sticks butter, melted
    Place blueberries in a 13x9 baking dish. Pour pineapples and juice over top. Sprinkle with sugar. Pour cake mix on top. Drizzle with butter. Bake @350 for 45-50 min.

    I recently saw a recipe for yogurt "bark" - pour a tub of yogurt (vanilla or lemon was suggested) on a sheet pan, then sprinkle in fruit or nuts of your choice then put into the freezer till frozen. Break apart into chunks.

    I am going to do this with vanilla yogurt and blueberries, as I have a big bag of them too!

    I put 75-100 grams with a yogurt cup on top. If it plain yogurt, I add walnuts or almonds and a drizzle of honey.

    Or I do a "cobbler"
    12 oz bag of frozen fruit
    1/2 box cake mix (white or yellow)
    12 pz can of diet soda, whatever flavor you like, or a lemon lime for neutral taste

    Layer blueberries in an 8x8 baking dish, sprinkle cake mix on top, pour soda over all, covering any dry spots. Bake at 350 for 35 minutes. Serve warm with ice cream or whipped cream on top.

    Blueberry pancakes.

    3/4 cup of oats
    1/2 banana
    2-4 tablespoons milk (I use almond milk)
    1/4 cup blueberries


    Make oat flour by putting oats in a blender until in powder form. Put the rest of ingredients in a blender. If consistency is not quite right add a bit more banana, milk or blueberries accordingly. Cook pancakes on stovetop.

    Make a blueberry sauce by cooking blueberries on stovetop with a small amount of maple syrup.

    Eat them frozen! I love frozen blueberries. Or add them to a smoothie. I've blended blueberries into a light Italian salad dressing and found it quite yummy.
