Well... Boredom struck me this morning because all I had was oatmeal and barely making it through half of it I wanted to actually MAKE something that tasted like I was eating delicious-ness! Don't get me wrong, I do love oatmeal... but come on... it can get old after having it all the time...

So I created Potato Goodness (after talking about some amazing dish I had at this little hole-in-the-wall place).

Ingredients:


2 Potatoes (Medium)
1 Stalk of Green Onions
1 Cup of Shredded Medium Cheddar Cheese
2 Large Eggs
1/2 a Link of Sausage
1 Tablespoon of Extra Virgin Olive Oil

***NOTE*** You can always alternate the recipe to your liking, this was just mine for the morning.

It has about 4 good hearty servings total.

Per serving nutritional value (again depends on what kind of ingredients you choose to use):


Calories: 307
Carbs: 16
Fat: 19
Protein: 13
Sodium: 284

    You could always use 2% cheese which has about 9 calories for 1/3 cup (which is a lot). And get lean turkey sausage. Then fry in cooking spray rather than oil. Great for a heavy workout day!

    This is pretty much what I did, may look unhealthy... but the ingredients were pretty healthy. Though I will admit, I'm not going to use the olive oil :(... not use to cooking with oil and it showed xD.

    I used 2% cheese, and lean turkey as well.

    Buttt... I made a huge bunch of it so that when I portioned it out it actually didn't add up to very much calories/sodium/everything else. Portions.
