You may want to be more specific. What kind of foods do you like?
Go heavy on the vegetables to fill your plate.

I like roasted vegetables.. asparagus is great as well as onions and eggplant. You can then add those to a pasta sauce or grain.

Scrambled eggs with onion mushroom spinach and feta is wonderful. You can even make that in a muffin tin for portability.

I make lentil soups, especially with red curry and coconut milk. Brown lentils with onion, garlic and a bit of spicy italian sausage.

Millions of ideas out there. Check out other posts for a few blogs. Your question is asked several times a day on these boards.

I make a dish that works a few different ways, and my husband loved it even before he was eating good.
I call it veggie patty parm
I grill a veggie patty (any kind but we like morningstar black bean burger or garden veggie) and then I put it on a bed of either sauteed spinach or chopped zucchini noodles. then I top it with warm marinara sauce.
I like marinara because it doesn't have the cream in it. if I have extra time I beef the sauce up with mushrooms and onion. if you have extra calories left you can add a slice of provolone cheese on top and bake it before you put it on your veggie. this makes it like chicken parmesan.

variation chop the veggies patty up after you cook it and add it to the sauce, serve it over zucchini noodles as spaghetti.

    variation #2 more work
I slice the zucchini thin on a mandolin, layer it like lasagna, top with a layer of veggie patty sauce (add mushrooms, onions ect if you want) layer of zucchini noodles then top with a "pesto" made from spinach and basil and a little water to make it thin enough to spread. I add a clove of fresh garlic to make it kind of spicy. We really like italian food so these work good for us and are vegetarian and low fat. But the spinach and veggie patties have a ton of fiber and protein.
