looking for EASY VEGAN dinner recipes

Hey! I am looking for quick and easy vegan/vegetarian/plant based dinner recipes I can make in ideally 30 minutes or less and are filling. I am open to raw vegan foods and am also not super strict but am trying my best to weed out animal products.

    Lentils and either quinoa or brown rice. You can flavor the lentils SO many ways! Taco, chili, curry, cajun....

    Friend me, I am vegetarian and have an open diary. Tonight I had tacos that took less than 15 mins to prep.

    Tons of recipes online, I made a lentil loaf the other night that was really freakin good. Lentils, quinoa, and oats as a base with green onion mix (be sure to check the ingredients for any animal product - my Kroger brand was vegan friendly), ketchup, soy sauce annnnd bake lol. Note: I precooked the lentils, quinoa and oats. Was very good.
    Pretty generic, but if you like sloppy joes: use meatless crumbles (vegan- make sure the crumbles don't contain milk/egg) and add in your Joe fixings. Very simple, very quick.

    Check out the vegetarian/vegan section on BudgetBytes.com . It's fantastic. There are also a lot of recipes like soups and sauces and rice bowls/pastas that you can easily make vegan by leaving out the chicken/replacing it with veg protein or replacing chicken/beef broth with veg broth.

    My favorite is the Black Bean Avocado Enchiladas, but that's a little labor intensive (it's super easy, it just takes a while to fill all the tortillas, roll them up, and lay them out without them unfolding).

    Look up Happy Herbivore. She does a lot of low fat vegan recipes and has some good cookbooks.

    My go to quick dinners are-

    Burrito bowls. I always make bulk rice and beans on the weekend- I warm that up and add it to a big salad and for dressing add taco sauce and salsa

    Potatoes! You can microwave one in 5 min. Add steamed veggies and I have a no oil "cream" type country gravy made with nutritional yeast, brown rice flour, , sage, etc and I cook it with almond milk and it's DELICIOUS over potatoes. I serve that with steamed veggies

    Sushi bowls- I make sushi rice ahead ( mixed with rice wine vinegar) I add that and fill bowl with sushi toppings- cucumber, carrot,avocado, crumbled nori, pickled ginger, sesame seeds,soy sauce

    Pasta with sauce and no oil roasted veggies

    Veggie burgers I make homemade and freeze- I microwave them for s minute and then toast it on s griddle and eat with a salad

    Quick curries with veggies and coconut milk over rice
