Mexican Pizza

ingredients:

1 pizza crust (i used a normal one but i bet thin crust would also be yummy!)
1/2 cup fat-free refried beans
1/2 cup salsa
1 cup mexican blend cheese
1 1/2 cups lettuce (as a topping)

preheat oven to the temperature as directed on the pizza crust packaging. spread refried beans and salsa on top of the pizza crust evenly. top evenly with cheese. bake for about 12 minutes or until cheese melts. top with lettuce.

nutrition info: about 200 calories per slice, 25 carbs, 8 g fat, 8g protein, 8g protein, 425mg sodium. your recipe may differ depending on ingredients!!

    I like to make mexican pizzas on a whole wheat pita, with some lean turkey meat, 1/4 cup of fat free refried beans, Sprinkled cheese lettuce and tomatoes on top. I love the Pita it gets crunchy on the edges and taste delicious. I also like to add the Turkey some some added protein, in fact I usually use 3-5 ounces depending on the calories I have left :)

    I used to work at pizza hut; our manager would make this when we reached our weekly sales goals as a treat for the crew. it was really good. thanks for the reminder. i'll have to make this for my kids!
