Right now I'm using GNC Gold Standard Whey. 24 grams of protein per scoop. Usually take two scoops right after my workout and I've seen results. Just make sure you're getting your recommended grams of protein. For me I make sure I get around 1 gram of protein per pound. :)

I experiment with different proteins but that one should be a good one to start with for you.

No protein builds muscle. Muscle is determined by your training and energy balance. Just make sure you are getting enough protein. 1gr per lb of lean body mass is a general guideline.

Legs and wings if you're trying to build arms and legs. Breast for chest. ;)

For building muscle you will want to be in a caloric surplus, and as long as you get adequate protein, cabs will be king for adding muscle. Protein is more important in a deficit, to retain muscle you already have.

What lifting program are you following?

It's so much about the kind of protein as it is about working out correctly and eating right..
