    I had the yummiest recipe made it once and have never been able to find it again which makes me so sad!

    I slice it thin spray with olive oil bake it for about 30 min at 350 then sprinkle with Italian breadcrumbs and parmesan and another slay of olive oil and bake about 5 more minutes

    slice; brush with olive oil; broil or grill it until tender.
    layer in baking dish with tomatoes or marinara sauce; top with parmesan, mozzarella, and bread crumbs if you like.
    bake until cheese starts to brown a little.
    low-cal eggplant parmigiana!

    broil or grill whole if smallish or sliced in half lengthwise if it's larger until it gets smoky and starts to char a little in spots.
    mash in food processor or by hand with garlic, tahini, salt and pepper. baba ghanoush!

    it's also really good in yu shang sauce (a.k.a. garlic sauce, a.k.a. fish fragrant sauce), but it's kind of a long recipe that I don't feel like typing out. I'm sure you can find lots of recipes if you google "eggplant in garlic sauce." I sometimes do a nontraditional eggplant & scallops in garlic sauce with chopped tomatoes. Mmmm.

    I use eggplant along with summer squash, onions, tomatoes, garlic to make a Ratatoulli that is simple to put together and tasty as a side vegetable or over pasta.

    I've had it coated in honey and fried in Spain before. Possibly not very low calorie but delicious!!!!
    Otherwise my go to recipes include pork and I assume you're a vegetarian?
