What are some nutritious, easy snack recipes?

Hi all! Looking for some (very) simple, nutritious snack recipes with ingredients that I can find around my house or easily at the store. I'm not vegan nor vegetarian but would prefer a recipe with little/no meat, little/no added sugar (except from fruit) and low fat--also, preferably under 200/300 calories! I'm a sucker for anything sweet. Know this is a lot to ask. Help me out!

1-Boil some quinoa.
2-Add pizza sauce in a microwave safe bowl.
3-Add boiled quinoa on top of it.
4-Layer it with chopped veggies.
5-Add cheese on top.
6-Layer it with more veggies and a bit of seasoning to your taste.
7-Microwave the bowl to get Tasty Quinoa Pizza.
