Aim to hit your calorie goal. Macro split is supposed to help you hit calorie goal, not add further problems. That said, how hard can it be? Carbs is sugar and starch. Fruit, grains, candy, take your pick. Is your problem lack of appetite/feeling too full? Eat at regular times, maybe more often.

Carbs are the least important to focus on. (Not saying low carb is necessary, before everyone gets out their pitchforks...) Hit your protein goals, then your fats, and carbs can be whatever's leftover.

Slice a potato into fries and season paprika (add oil if you want, but it won't be as healthy)

How does oil make it unhealthy, especially considering its unsaturated fat, which has been linked to lowering cholesterol. I do agree with making french fries!

I eat a lot of fruit (especially during summer time), rice, potatoes, quinoa, oats, whole grain breads and legumes are all my carbs.

I try to stay as close to a 40:30:30 Carb/Fat/Protein ratio as possible at around 1200-1400 calories. I normally plan out all of my meals for the day and then make small modifications to get closer to this goal. It's a lot easier for me to plan ahead then to be stuck at the end of the day needing an extra 40g of carbs. Fresh or dried fruit or a small amount of granola seems to be the easiest way for me to add in carbs without throwing other macros off.

I started eating steel cut oats with fruit a few months ago and that takes up about 40% of my carb goal for the day. Highly recommended if you like oatmeal! Some of my other favorites are brown rice, starchy veggies, and black beans.
