Friday Night Pizza
I make a pizza most Friday nights. 450 degrees on the bbq. takes about 14 mins to cook. I use a lodge cast iron pizza skillet for a crispy bottom. I make four crusts at a time and freeze them. I have listed the recipe in my recipes on my profile and would like to share i,t and see what others think. This is the basic recipe and I often add ingredients. I love home made pizza. I discovered recently that if you steam pizza bases, they bake up beautifully, soooo crispy! It's weird, counter-intuitive, I don't even know what made me try it the first time, but if you have some way to steam your bases you should really try it - I think it's a similar effect to putting steam in the oven when baking bread, it gelatinises the outside so that it goes super shiny and crispy when the dry heat hits it.
You just make them as usual, shape them in a pizza tin, let them rise, and then steam over boiling water for 10min until cooked through. I use a huge Chinese steamer but you can just prop the tin up on something (a plate, a cookie cutter, crumpled foil) in a frying pan with water in the bottom and a lid on top. You can then freeze them and top and bake them from frozen.
