I need a dinner idea, y'all.

Here's what's in the kitchen until tomorrow's payday:
  • chicken breastses (mid-thaw)
  • hamburger bun (one)
  • rice, quinoa, barley
  • corn tortillas
  • eggs
  • salsa
  • pinto beans (canned, ready-to-go)
  • sour cream
  • various condiments
  • breadcrumbs
  • mixed greens that are on their way out
  • half a jalapeno

I am mostly out of vegetables and it's making me sad and unable to settle on anything because MEAT AND CARBS.

Ideas:
  • chicken teriyaki with rice
  • chicken tacos
  • chicken taco salad
  • "fried" chicken sandwich (no slaw - womp womp)
  • burrito bowl
  • egg salad sandwich

Anything else, you creative sons of guns?

P.S. I have about 600 calories left, if anyone is wondering, but I wouldn't expect you to do any math and calorie counting on my behalf.

    It's probably wayyyyyy too late, but I vote for the chicken taco salad. Use up those greens.

    I went with a burrito bowl. I was jonesing for some rice.

    Hopefully the greens will still be good tomorrow. :#

    Bake the corn tortillas on 400 degrees for about five minutes. Grill the chicken on the stovetop and slice up. Mash up the pinto beans and spread on the tortillas. Seed and slice the jalapenos and top the beans. Place the sliced chicken on top, add some salsa and a little sour cream. Have some greens on the side and if your condiments include a little olive oil and vinegar dress your greens with that. Voila...you have the perfect tostada and a light side salad. Yum, makes me hungry!

    I too vote for chicken taco salad for dinner,
    Egg salad salad for lunch, could put the greens on both, at least your protein will be high!
