What fats do you like for roasted veggies?

I decided to roast some vegetables in the slow cooker last night. I can't believe I didn't try this sooner! It's a lot tastier, quicker, and easier than cutting raw veggies everyday.
I used 14 grams of bacon grease this time around and plan to add 7 more grams of whatever I use next. The bacon grease was nice, but I'm running out and don't want to buy more. I don't like it and suck at making it for other people.
I have olive oil, peanut oil, duck fat, and butter.

I roast my veggies in the oven w olive oil.0

We always use the olive oil. I'm guessing the peanut oil, duck fat and/or butter would have too much flavor and that flavor would overwhelm any vegetable.0

Lard! I buy mine at the farmer's market.0

You know, you can render good lard from any pork fat ... slow and steady, maybe even in your crock pot for a day at the low setting. Just saying cause if you like the taste of the bacon grease on the veggies you are currently cooking that way, you may miss the taste of it when you switch to something else.0

Smoked duck fat. It's like a pig and a turkey had a baby and rolled it around in a pile of heaven.3

I quite like red palm oil - no this is not the same thing as "palm kernel oil" just in case that's what you were thinking! lol0

I used to use olive oil, but the last two times, I have used a little vegetable stock. Turned out great.0

When I use the slow cooker I don't use any oil/fat. Just add some water and seasoning. Veggies seem to hold plenty of moisture in the slow cooker, adding oil doesn't really seem necessary to me.
Otherwise I cook a beef roast or chicken with veggies, and again just add water.1 -

Bacon/sausage fat, olive oil, or coconut oil, depending upon the vegetables. Mushrooms for example, work amazing with the first. Spinach and cauliflower work great for the other two.0

I would try any fat. I save fat from cooking meat in the slow cooker - I currently have some chicken schmaltz sitting in the fridge, I will probably use it for pastry or dumplings, but roasting veg in it would be great too

I usually use olive oil. Sesame oil is also good for Asian-inspired vegetable recipes.0

From your list my favorites would be olive oil and butter. Personally my favorites are olive oil, canola oil, coconut oil, and peanut oil.0

I agree. Sesame oil is good for Asian inspire recipes. I also like to make infused oils with my favorite being basil oil.1 -

Bacon fat is my favorite. I also use butter, coconut oil, olive oil, and most recently avocado oil. I don't mind if the veggies dry out a bit, so I use a small amount that doesn't make a huge difference in the taste.

Have you ever used pecan oil? It has a higher heat tolerance than olive oil, so it's good for a quick sear, and it tastes great in soups and salad dressings, too. If you're doing a large batch of veggies and you might use some for soup or cold on a salad, try the pecan oil. BTW, it's great for making pancakes with too, and cakes.0

We're huge on olive oils here- I tend to 'collect' gourmet olive oils. My favorite is a garlic rosemary olive oil over zucchini, summer squash, etc.0

Roast a piece of beef , turkey , duck etc and keep the drippings for roast patatos or veg0

I us avocado oil or olive oil. I have started mixing one or the other with a bit of safflower oil when grilled or sautéing.0
