what are the carby veggies??

im trying to eat more veg and less processed carbs like bread and pasta's etc as a substitute, but iv noticed today that even carrots are quite high in the carb count.

i know the obvious culprits being potatos and parsnips but what are the veggies that have the highest carb contents and which are the ones with the lowest....as these are the ones i would rather stock up on!

    I would guess peas would be up there in the carb count.

    i do the same thing. so i eat a lot of lettuce, all kinds. celery is great - u can put that laughing cow cheese on it. tomatoes. cucumbers. i still eat the carrots because eating carrots instead of chips and crackers is fine... but bell peppers are a great substitute, all colors. NO corn or potatoes, of course. onions are fine in smaller amounts like in recipes, same with mushrooms. brocolli is great. and green beans and snow peas are OK in smaller amounts...

    what i do is i buy the celery and the peppers, and baby carrots and grape tomatoes at the beginning of the week. i cut them up and leave them in a container in the fridge for easy snacking!

    there is also a super easy/ low carb recipe for "sour cream and onion dip" but u pretty much just use greek yogurt and onion powder.

    i also eat a lot of asparagus.

    just preheat the oven to 350 degrees, cut off the ends of the asparagus. get a baking pan out. place the asparagus in the pan, add some olive oil 1 - 2 table spoons, about. salt and pepper to taste. and sometimes i add garlic powder or (even better) minced garlic.

    squash can also be baked in the olive oil - also very low carb and yummy.
