Black bean fajita bowl -- YUM!
Here's what I "invented" for dinner tonight:
1 can black beans, drained (240g net)
1/4 red onion, chopped
1 clove garlic, chopped
1 cup chicken stock
1/4 tsp cayenne pepper
1 tbsp chopped cilantro
2 oz chopped cooked chicken breast (60 g)
Bring the beans, onion, garlic, and stock to the boil. Reduce heat and simmer 15 minutes. Add the cayenne pepper, cilantro, and chicken and simmer for another 5 minutes. Meanwhile, prepare the salad base. You'll need these ingredients:
1/4 small head iceberg lettuce, chopped (approx 60 g)
1 small tomato, de-seeded and chopped
1/4 red onion, chopped
1 tsp cilantro, chopped
juice of 1 wedge of lime
1 tbsp sweetcorn
2 tbsp low fat sour cream
2 oz half-fat mature cheddar cheese (60 g)
Place the lettuce in the bottom of a bowl or on a plate. Pour the cooked bean mixture on top. Add cheese, tomato, onion, cilantro, lime juice, and sweetcorn. Top with cheese and sour cream.
Based on my ingredients, values are: 540 cals, 59 carbs, 11 fat, 3 fiber, 50 protein, 5 sat fat

Of course! 240g of cooked beans isn't a huge amount at all. Great flavour, high in fiber and protein. Me + beans = true love forever!0 -

This has become a new staple for me. I made it without the chicken yesterday and put the bean mixture in a tortilla for a yummy burrito. I'm also thinking you could do it with pinto or kidney beans, too, which makes it a true pantry staple!0
