Need some healthy dinner options

So, Breakfast I've got sorted, Special K is a staple in my diet now and I usually have some yoghurt with fruit for lunch. I'm just struggling to find healthy options for dinner. My main issue is that I live with my boyfriend, a healthy bloke who can eat a horse for dinner, so how do I keep him happy without giving myself too many calories? :huh:

You could roast Chicken / Turkey breasts and veg (onions peppers, corgettes etc)
Double your portion of veg give him rice, pasta, potatoes.
I love cauliflower mash ( as an alternate to potatoes)
Mash up some boiled cauliflower , add a low fat cream or milk what ever you perfer, onions and mix in a low fat cheese. ( Laughing cow is nice with it)0 -
