When i started my weight loss a year ago I had to get some new kitchen essentials. The tools bought were many and varied but at this point I couldn't do this healthy eating thing without.
A good blender. I went with Ninja been very happy.
A crock pot/electric pressure cooker.

Scale for me too, a good pan, and a set of good knives. I don't do shakes often and have no need for a crock pot (I work from home so I can watch the food while it cooks).1

I'm not listing a food scale as that should be a given, given the website.
A dutch oven for braising meats/stews/soups/bread/etc and a lot of two-cup glass storage containers with lids. The containers are pretty essential to how I now eat since controlling food portion sizes to control calories.

It's stupid, but I use my veggie spiralizer at least twice a week. It was honestly a game changer for me because it made cooking easier and I can eat a TON of food at once without going over calories.
Good tupperware. You can use it for prepping food. Saving leftovers. Bringing food to your coworkers to get it out of your house. The options are endless.2 -

My top runner up was my spiralizer for pretty much the exact same reason as you Phrunch. Not stupid at all.

My current favourite pan is a nonstick Esteele saute pan with a heavy base.1 -

A good set of pans ( I was still using what was left from when I married my ex in 1987). That inspired me to try lots of new recipes which have made it easier to stay on track. Second I just got a Ninja system with the blender and food processor so it has lots of versatility.0

I got a new set of ceramic pots and pans...and I'm really enjoying my Ninja for smoothies and protein fluff. When its colder, I use a hand blender/immersion blender for hot liquids more than the Ninja.0

I've only had it for a week, but I've used my Instant Pot like crazy. My veggies, beans, and grains are cooked nicely with less effort and effort than before; I'm making my own yogurt and looking into other dairy products; and I've made a few things for other people.
