Is there any substitution in lo carb recipes that call for pork rinds. The thought of them grosses me out!

How many recipes are you looking at that involve pork rinds? Just eat any other recipe in the world.
BTW, they are really good.2 -
Pork rinds are usually a substitute for crumbs, i can't think of a sub for rinds, except for maybe shaved coconut or flax meal, but it all depends on the recipe... Just choose a recipe that doesn't include them.0

If it is for breading I have used almond meal for that rather than pork rinds like for eggplant parm. I ate pork rinds before I knew what they were so yes they are gross sounding but they are good.0

Depending on the recipe, Parmesan cheese is used for breading.0

Pork rinds are legitimately amazing. However, they are easy to avoid if you don't like them. Most often they are used purely for adding a bit of crunch to stuff. However, I have been known to just take a bag of them, dump in some cinnamon and walnuts, and have at it.1
