What do people have for lunch when they are working instead of sandwiches

    I usually pack a few leftovers from the previous nights dinner.

    deli meat and cheese rollups, mason jar salads, soup, homemade chicken salad with crackers, also my own healthier version of a "lunchable" with meat, cheese, grapes, and almonds.

    I also buy wasa crackers and layer guacamole, lunchmeat turkey, tomato, and cucumber on top. so good!

    Quinoa Pizza Bowls

    You need
    • Microwave safe bowl
    • Cooked Quinoa
    • Diced veggies
    • Mozzarella cheese
    • Pizza sauce

    Step 1. Put pizza sauce in a microwave-safe bowl
    Step 2. Layer cooked quinoa on top of the pizza sauce
    Step 3. Cover the quinoa with cheese
    Step 4. Add chopped onions, sweet corn, capsicum and shredded carrots
    Step 5. Top the bowl with more shredded cheese
    Step 6. Sprinkle some chili flakes on top
    Step 7. Top off with a little capsicum and carrots
    Step 8. Pack the bowl and take it to office with you
    Step 9. Pop in the office microwave for 2 minutes

    Lately my favorite is a rice and bean bowl :) I precook a big batch of rice and beans at the beginning of the week and pack it for my lunches. Usually throw in some cheese, a few seasonings (cumin in a favorite and full of iron!) and a healthy handful of spinach/kale/some sort of green. Heat it in the microwave and I have a bowl of ooey yummy protein filled goodness that keeps me full til dinner.

    I do mason jar salads every single day. You can mix up the toppings, but I always do green onion, feta cheese, roasted turkey and lots of spring mix or romaine. I make them Sunday night then grab one on my way out in the morning. They have always stayed fresh all week. I work 10 hour days with a hour drive so I don't really have time to make anything the night before and I am not going to get up at 4 am to make my lunch for the day. I do overnight oats for breakfast, or a ham and cheese on wheat. I do measure out the dry ingredients on Sunday then add the wet stuff the night before.
