Help please! Need vegetarian recipes, carnivores will love!

My husband has decided to go meatless for a month, so I said I would try to find some recipes that make even non vegetarians satisfied and not missing the meat:) I'm a vegetarian so pretty excited that he's going meatless for a month:) Always looking for new recipes instead of the same old:)

Spinach and chickpea curry is a great one. I love meat but make this for my vegetatian daughter and must admit it is quite tasty

Check out thekindlife.com. Great recipes there. I've been vegetarian for 6 months, my husband decided to be too after he liked what I was making. A lot of veggie stir frys, boca burgers, and Quorn products help with the transition. Just make the same things you would for a meat dish, but leave out the meat or use a meat alternative. Quorn crumbles are good in tacos, spaghetti, etc. Seitan is also pretty good- but it's pure wheat gluten so not to eat it too much- it's freaking awesome in fajitas though!0

These are divine! I eat them with tamarind sauce. I have also added sauteed onions, coriander and curry to the recipe. They're great!

Eggplant Parmesan is always a good idea. So are portobello mushroom burgers. For those you take the cap and grill them. They taste just like beef and are delicious! Hope that helps0

I like to make fajita-style wraps for my vegetarian friends when they come over for dinner. I set out all the toppings like a smorg and let folks dig in as they please. It's been very popular, even with the meat eaters.
Options:
-whole wheat wraps
-mozza cheese (if non-vegan)
-lettuce or spinach
-salsa
-hot peppers/jalapenos
-sliced olives
-diced onions or green onions
-etc.
Filling:
1 cup cooked corn niblets : 1 cup soft black beans : 1/2 or 1 cup chopped mushrooms : 1/2 cup diced red peppers : 1/2 cup diced onion : cilantro to taste Mix and cook in a frying pan with a bit of olive oil, and some spices to taste (I use homemade fajita seasoning -- see below). The longer it sits, the more the spices mingle.
Fajita seasoning - equal parts:
-vegetarian bouillon cube
-chili powder
-paprika
-garlic
-pepper
...and a bit of cumin and cayenne. Salt to taste at the end of it (will depend on how salty the bouillon cube was).
This dish is super quick, very versatile and packs a lot of flavour. Plus, it's SO easy to substitute in ingredients.

My whole family loves vegetarian chilli and it is low calorie. I use pinto, black beans and chick peas. They have this great soyrizo (vegetarian chorizo). We also like vegetarian spaghetti.0

Are you trying to stay away from faux meats?
If not: Light Life Smart ground is an awesome ground beef substitute
If so - I'd say greek foods - with kalamata olives
and any foods with eggplant &/or portabello mushrooms.
They're always filling and satisfying =]0 -
Look up the Native Foods cookbook, ("The Native Foods Restaurant Cookbook") - I have made any recipes out of there but I LOVE eating at the restaurant.0

Moosewood has a ton of cookbooks. I got Low-Fat Moosewood Favorites when my son decided to go veg, and everything we tried is SO TASTY!0

Have a look at Indian recipes - lots of fabulous tasty vegetarian recipes. My favourite - dahl (lentils), palaak paneer (spinach curry with home made cheese). Some versions can be quite high in calories, but it isn't hard to reduce the amount of oil and coconut milk to keep them down.
Or things like veggie lasagne are a classic - very satisfying and familiar for meat eaters.0 -

I'm vegan, but made a lot of vegetarian foods before.
Mock chicken parmigiana-get a faux chicken schintzel, make a yummy tomato sauce, poor over cooked schnitzel and melt cheese on top. This is my omni bfs favorite.
Butter tofu (butter chicken but with tofu)
Spinach and feta pie
Spinach and feta cannelloni
Various stir fries, curries, pasta dishes
Nachos mmmmm with lots of beans and salsa

I'm veggie and when I'm cooking for carnivores, I usually find the following go down really well:
+ Spicy butternut and goats cheese lasagna (this always gets requested and there are never any leftovers!)
+ Anything Mexican! (three bean chillis, tacos with spicy quorn and mixed peppers, burritos etc)
+ Homemade veggie burgers with sweet potato chips (this is a great book: http://tinyurl.com/veggieburgersbook)
+ Filo pies filled with a mixture of riccotta cheese, parmasan and swiss chard)
+ Thai green curry with peanut noodles
+ Pad Thai (yum!)
That's just off the top of my head - my dairy's open if you ever want ideas, more than happy to share recipes0 -
I would suggest recipes with beans as they are very filling and most carnivores eat bean meals occassionally anyway. Beans and cornbread. Just about any type of beans and rice. Bean burritoes. Meatless nachos. Black bean soup (a really simple recipe for this is to saute onion and jalapeno then add beans and store bought salsa). Hummus and grilled veggie wraps. Veggie pizza or calzones are also good options. Vegetable lazagna. Meatless stir fries. If he's eating eggs, omelettes.0
