How about chinese Hot & Sour soup? The traditional kind uses pork and chicken broth, but there are a few vegetarian variations out there:

coconut noodle bowl with veggies.
- fry veggies, garlic, chili, ginger, lemongrass
- add coco milk, soy, fish sauce, crumbled veg stock and fresh coriander
season to taste.

If you want fast and minimal heat in the kitchen:
Soba noodles
Peanut sauce: rice wine vinegar, peanut butter (about 1 teaspoon per person worth), chopped garlic, chopped ginger (go easy!), sesame oil (1 teaspoon per person), soy sauce, maple syrup (teaspoon rule again). Wisk all together. Adjust by taste.
Vegetables: snow peas, sprouts, avocado, shelled Edamame
Cook the soba, whisk up the sauce, cut up the avocado (small amounts!). After draining the noodles, put in a bowl, mix all together. Can eat it hot or cold. Letting it marinate is the best.0 -
Honestly, I love Vietnamese summer rolls but I'm crap at rolling them up. So I make them as a noodle salad instead. Just put together the cold vermicelli noodles and veggies. I like snow peas, sprouts, cucumber, etc. Then I shred some mint, cilantro, and basil and throw that in with some crushed peanuts. I'll make a nuoc cham for salad dressing. Here's a recipe from epicurious. I'll admit I cut back to 2 TBS of fish sauce and instead of chopping peppers I throw a little chili garlic sauce in that bad boy instead.

I like simple dishes like sushi bowls ( everything on a vegan sushi roll thrown in a bowl- rice, cucumber, carrots, pickled ginger, sesame seeds, nori, soy sauce). I also like a peanut satay bowl. To a bowl of warm rice add peanut butter, soy sauce, sriracha, ginger, steamed broccoli, peas etc. and stir it all up. Seems complicated but you just throw it all together.1

I made a simple Mushroom and broccoli stir fry with no oil, onions, bell pepper, water chestnuts. Sauce was garlic chili sacue, rice vinegar, cornstarch, soy sacue, teriyaki sacue, and spices. I subbed amaranth for rice, I think I like quinoa or millet better as subs)0
