Any simple and healthy brown paper bag lunch recipe ideas out there?

I just started using the mason jar salad ideas, been great so far If you can't use fresh veggies for whatever reason, canned veggies work well too.0

I LOVE bringing rice and bean bowls to work. I prep a bunch of rice and beans (usually mung beans) at the beginning of the week and theyre easy to throw into a tuppleware dish an go, I usually put in a healthy serving of greens (spinach is my favorite) and some a little cheese and it fills me up nicely til dinner.0

I use these for lunches. I pack salad, fruit and a protein.

I make Mason Jar soups ALL the time.
* Grilled Chicken strips from Costco
* raw peppers
* raw shallots (long onions with white bottom and green tops?)
* Chinese vermicelli noodles (I get these at grocery store in "international" section)
* herbs from my garden (parsley, cilantro)
* chopped garlic
* carrot slivers raw
* 1 tsp BOVRIL chicken (costco sells huge bottles)
* Splash of Hot Sauce
I put the noodles in first and then the chicken and everything else. I fill the Mason Jar on my scale so I can weigh everything.
Often I prepare all 5 jars for my week. Then it is grab and go!
When it is lunch time, boil water (we have a kettle in the office kitchen) and pour into the Mason jar when it is ready. Seal with the lid, and take to the table, shaking (gently) over a period of like 3-5 minutes or until it is obvious the noodles are soft.
Pour it into a bowl and enjoy!
I LOVE the soups above - and make it as much as I can.
You could substitute the chicken with beef strips if you cook them and beef bovril if you prefer.
Sometime I use left over rice instead of vermicelli and I have also put left over vegetables from dinner in there too.

I like bringing different wraps made with Flat Outs. Grilled chicken, romaine, matchstick carrots, shredded cheese and a drizzle of Caesar dressing. Smoked turkey, romaine leaves, cucumber slices, cheddar cheese and a drizzle of ranch dressing.
I grill a bunch of chicken breast on the weekend and portion it out into zip-lock bags. Stick it in the freezer & I've got salad or sandwich fixings all week.
Hard boiled eggs for egg salad or protein/fat add on for regular salad.
Tuna salad has great protein numbers. Pita pockets are another way to stuff a bunch of veggies in there.
Make a big pot of chili, soup or stew - freeze individual bowls. Wal-Mart even carries "heat-n eat" disposable containers (Reynolds). I like Skinny Taste and Cooking Light websites.
Cottage cheese & fruit with a veggie tray.
A snacky type lunch - cheese sticks, nuts, assorted veggies and hummus. Get yourself a Bento box....tons of ideas (Pinterest).
