I'm fairly new to eating right, so I don't really know many quick, filling meals.

- Scramble eggs with leftover cooked veggies, or make an omelet.
- Use a big lettuce leaf, layer lean deli cuts & cheese, wrap up lettuce leaf, and devour.
- Stir-fry any veggies and tofu, scallops, chicken or lean beef or pork, toss in a few nuts if you like - takes just a few minutes.

Great ideas! Any more?
One of my favourite quick eats is stirfry too , because you can really vary the sauces and spices. Some other options off the top of my head:
1. Baked chicken breast with baked veg - requires very little prep - if you want to, you can briefly marinate the chicken in things like yoghurt/garlic or a spicy sauce and then pop it in. Baked veg with a tiny bit of olive oil and salt/pepper or spices like paprika/chilli etc
2. Lentils as soup or as indian-style 'daal' are also quick and easy (can send you recipe if interested)
