You NEED to eat more, 1200 is the MINIMUM your body needs.
If you aren't hungry, eat calorie dense foods - nuts/oils etc0 -
This is confusing, if you're eating fast food after work most days and also eat dry cereal without logging it sounds like you're eating a lot more than 500 calories.
Are you logging (and preferably weighing) everything you eat?1 -

I am sorry if I misunderstood this part, but do you think you got weight eating 500 kcal and are here to eat more - to lose weight? You did not put on 20 lbs in 2 years by eating too little. It doesn't work that way.
You are more than likely highly underestimating your calorie intake...which is better than if you were really eating 500 kcal a day. 500 is what most sandwiches have without eating anything else all day. You need to log everything and see where your calories are coming from... You say you drink a lot of coffee...do you use sugar or cream? Did you think to count those? Everything you eat and drink has calories (except water and diet sodas and such...) and it all adds up quite fast.0 -
From all OPs responses, actually she's eating around maintenance, seeing as she hasn't said she's losing loads of weight per week - which she would be if she was only eating 500 cals!0

I think that we can yell at the top of our lungs to eat more, to please eat 1200 calories, etc. but in my honest opinion I see some "irrational" behavior and thoughts that need something much more than what we can say.
Until I see the diary, if it is being used at all, I am pretty much sure that this case in general is not your typical case where we can make rational advice to a rational person.
I would think that 500 calories depending on how long this has been would have spelled a title called "Loosing to Fast, Am I Eating to Little"? Or "I am Eating 500 Calories and Not Loosing"0 -

I agree...but she also thinks she's not eating enough and should eat more...That would lead to gaining weight. I think she should really look at everything she eats and figure out proper way to count calories... I agree that if she was really eating that little she would be dropping at least 2lbs/week - it would be quite noticable at her weight.0 -
This one seems so obvious: you're lying to yourself. I would be hard to eat nothing but fast food and chicken wings and still amount to only 500 calories, AND you certainly wouldn't gain weight on 500/day.
If you want this website to work you've got to be accurate with your logging!3 -

A Whopper is 770 calories, I looked it up. The last time I ate at Whataburger my burger and fries were close to 2000 calories, which is why I don't eat at Whataburger these days. The only thing I could find at BK that was less than 400 cals was a single order of fries. Even the fish was over 400.
MFP does not tell you that you're going to get fat. It likely told you something like, If you eat like this every day, in five weeks you'll weigh X. That number will be higher on high calorie days, but if you go below 1000 it will give you a giant warning in red letters about how you're not eating enough.
If you want to know what to bring for lunch, you could bring something like a sandwich, some nuts, some raw celery with peanut butter or tuna salad, etc. It depends on what you like to eat, what fills you up, and what fits your macros and calorie goals. The thing is that YOU have to do the research and the work to figure this out for yourself. We can't do it for you, we can only make suggestions.
It sounds to me like you're making guesses about calorie content and not logging everything that goes into your mouth. I'd say those are your two biggest mistakes. Fix those and I'm pretty sure everything will make more sense.1
