I love avocados!!!! I love them plain. I love them on sandwiches. I love them cut up in cottage cheese. I love avocado soup. But I need more ways to eat them. Tell me any good avocado recipes you know of.

    I cut up 1 avocado 1 cucumber and hand full of grape tomatoes i cut the tomatoes in half and add a drsg i use olive oil and red wine vinager s&p

    I actually like to put 1/4 of avocado in my protein smoothie.
    1 scoop powder
    1/4 avocado
    milk
    ice
    maybe some banana or spinach
    megagreens
    Blend it up and drink. It makes the smoothie rich and thick and creamy and yummy!

    I also like avocado icecream (try foodgawker.com for a recipe) and want to make some using greek yogurt.

    I like to make burrito bowls (like they have at Chipotle). Uncle Bens whole grain rice + 1 avocado + 1 cup of corn + 2 strips of morning star fake chicken. YUM!

    For a lower calorie version, use 1 avocado and a package of peas. Cuts the calories down.

    I found this recipe on line under summer salads. I haven't tried it yet:
    Ingredients:
    • 3 ripe avocados, halved
    • 4 tsp. fresh lime juice
    • 1 tsp. finely chopped chipotle chile in adobo sauce
    • Salt and pepper
    • 3 tbsp. EVOO
    • 6 oz. fresh pineapple, coarsely chopped
    • 1/2 cup canned hominy, rinsed
    • 3 tbsp. chopped cilantro
    • 2 tbsp. finely chopped red onion
    Directions:
    1. 1. Scoop out the flesh from the center of each avocado half, leaving 1/4-inch perimeter of flesh intact; coarsely chop the scooped-out flesh.
    2. In a large bowl, combine the lime juice, chipotle and 1/2 teaspoon each salt and pepper; whisk in the EVOO. Add the pineapple, hominy, cilantro, onion and chopped avocado. Fill each avocado half with the salad.

    Replace the chips with carrots or cucmber sticks. I saw on Food Network Star the other night a girl made a slaw with avocado and something else instead of mayo. Check that out on their website maybe.

    top with: slice of turkey, avocado slices, thin tomato slices
    top with grated cheese and bacon bits
    toast the whole thing in toaster oven.
    I make a bunch of these and serve them with homemade soup.

    By far my favorite avocado recipe is Pineapple avocado salsa!

    7 oz. can crushed pineapple
    1 avocado; peeled, seeded, and chopped into small cubes
    3 t. sweetened lime juice (regular works too, i just like the sweetened kind better- you can find it in the alcohol section)
    1 t. ground ginger
    1 t. cumin
    2 T. fresh cilantro, chopped (dried is okay too, but fresh is better!)
    Optional:
    1/4 t. cayenne pepper
    3 T. sliced green onions

    That sounds *amazing*, but not really within my dietary limits. French bread, cheese, bacon bits?

    Hot Avocado and Shrimp Soup

    1 small onion, diced
    2 stalks celery, chopped fine
    4 cups chicken broth
    1 bay leaf
    4 sprigs parsley
    1 cup sour cream
    1/8 cup chopped chives
    Salt and Pepper to taste
    2 medium avocados, peeled, seeded, roughly chopped
    1/2 cup cooked small shrimp, shelled, de-veined

    Place onion, celery, broth, bay leaf, parsley, salt & pepper in a large saucepan. Simmer for 15 minutes. Strain and reserve stock.

    Place avocados in blender or food processor; puree avocados while slowly adding stock.

    When mixture is smooth, return to saucepan and heat gently; add shrimp. Cook over low heat until heated thoroughly, do not boil.

    Serve with a dollop of sour cream atop each serving, and sprinkle with chopped chives.

    Garnish with a slice of Fresh Avocado and sprig of cilantro

    buy some pico (or make your own using tomato, onion, cilantro and jalapeno), add avocado and boiled shrimp, i chop up an extra jalapeno when i want it spicier... good with chips, good in a quesadilla, good by itself, very light and refreshing

    Chocolate Pudding:
    1 avocado
    1 c. mango or banana - either fresh or frozen
    3T agave syrup or maple syrup (I used agave)
    3 dates (soak in warm water for ½ hour before using)
    1T cocoa powder (mine was kind of a heaping Tbsp as I was not sure what to expect)

    I used the Magic Bullet blender which worked ok. Started with the avocado and mango and pureed a little bit. Then added the agave, dates and cocoa powder and kept purifying. Occasionally I stopped the machine and scraped the sides.

    The recipe states to serve 'as is' or with fresh berries.

    Avacado/Tuna/Egg Salad

    1 Avacado - Diced
    2 Hardboiled Eggs - Chopped
    1-2 handfuls of spinach chopped
    1 6oz can of tuna or chicken
    Some chopped pickels or relish

    Mix all up, eat by itself or plop on a tortilla or toast.

    Suprising I can enjoy a tuna salad without mayo!
