Ground Beef

I was just wondering what do you use ground beef to make something healthy. I know you could do ground turkey which we do once in awhile but my husband is a beef lover so I need to throw that in there once in awhile. We also love pasta but I am trying to only do that once in awhile were as before we would have paste once or twice a week. We also do tacos with homemade beans. We have done meatloaf as well. Last week we made bun-less burgers with an egg on top and it was yummy!
Any other ideas are welcomed especially more healthy ideas!

    Search the old posts. There is a recipe for "crock pot cheese burger" that is out of this world. (I too, am a meat eater and ground beef is the best.)
  • As far as hamburgers go, Wonder makes an 80 calorie wheat bun that we enjoy.

    We recently invested in some 300 calorie cookbooks, but I haven't had a chance to look closely at them yet.

    I can tell you that using the 80% beef and then draining and rinsing it leaves it with less fat than the extra lean. Unfortunately, the original article is gone :( I do have a quote that I put up three years ago from that article, though:
    A 4-ounce raw portion of regular hamburger that has been cooked, drained and rinsed has approximately 155 calories, 9g fat, 4g saturated fat and 46 mg cholesterol. Compared to the values for super-lean ground beef above, drained and rinsed crumbles have 15 fewer calories, 1 more gram total fat, 1 more gram saturated fat and 15 fewer miligrams of cholesterol. Because of this information I am whole-heartedly willing to eat and recommend regular ground beef that has been cooked, drained and rinsed to anyone who is trying to eat a healthier diet


    So that opens up to using it in spaghetti, chili, tacos, etc. without too much problem (diet wise).

    Oh-and a favorite recipe of mine is hamburger potato soup. :) I use hamburger (browned and drained first), onions, potatoes (cut bigger than for potato salad, but not too huge), carrots, and green beans (all fresh). Some reduced sodium beef broth, water, nutritional yeast, basil, and a bay leaf or two... simmer and simmer and simmer until all the veggies are nice and tender.

    I use ground beef for only 2 things: chilli and taco. Both of these considered not so good food, but the fact is if you make them home, you can use very lean meat and next to no added fats, and they are not bad than. I eat a huge salad with 2 homemade taco , or a big bowl of chilli with lots of veggies cooked into it is great dinner for colder days. (just skip the bread, or eat very little with it)

    You could use it to make gyro type kebabs. Take the beef, season it, press it into little egg sized balls, slide it onto skewers, make sure it's pressed tightly onto the sticks. Thread your onions, cucumbers, tomatoes, etc on around it, grill it or cook in a pan, but make sure to drain it if you pan fry. Can cook over a rack in the oven is even better, that way grease drops away below onto a sheet pan instead of into you ;)

    Instead of serving with pita bread, serve it over a nice healthy salad with some whole wheat tabouli. :)
