Looking for Instant Pot/Electric Pressure Cooker recipes
By the time I get home from work I have no desire to stand in the kitchen making dinner, so we opt for convenience foods that are not kind to my waistline. I decided to get an electric pressure cooker to try to get home-cooked meals on the table a little faster. Unfortunately, the majority of the recipes are heavy on the cheese, pasta, rice, etc. I'm looking for any tried & true recipes from my fellow MFP'ers out there!

This was my first dinner and I loved it. Ended up using a slice of bacon because we were out of chorizo when i cooked it. Less beans too.

Just got mine. I have been following a facebook page called Instant Pot Community. They are very helpful and answer questions too.2

Trimmed flat cut brisket, 1/2 jar of ur fav salsa, 1 chipotle,
Salt pepper meat
Brown meat if you want (I do)
Poor salsa over meat, chipotle on top of meat
Put on lid and cook, small brisket about 45-60 minutes
Make tacos, eggs, quick wrap, sandwich.1 -

I use mine once a week for steel cut oats. They keep in the fridge and warm in microwave nicely.

For an extra special treat I add slivered almonds, toasted coconut, and mini choc chips. As long as I carefully measure amounts still fits in my calorie goals

I also like to have rice in the freezer for quick meals. This is a yummy recipe that I've adapted by just throwing all the ingredients in and using rice setting (I don't pretoast the rice..)

I love my Instant Pot for homemade yogurt. I also make curry in my Instant Pot, but I don't use a recipe. I also made this chicken recipe using the Meat setting rather than following the directions included in the recipe.

You only need a few ingredients to create this sweet and peppery chicken. The subtle flavor of apple makes this tender barbecue dish stand out from the rest. Darla Andrews - Farmers Branch, Texas

METHOD:
TIME: Prep/Total Time: 20 min.
Ingredients:
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon pepper
1 tablespoon olive oil
2/3 cup chunky applesauce (I used unsweetened and decreased by half)
2/3 cup spicy barbecue sauce (I decreased this by half)
2 tablespoons Dark Brown Sugar (I used coconut sugar instead)
1 teaspoon chili powder
Directions:
Sprinkle chicken with pepper. In a large skillet, brown chicken in oil on both sides. In a small bowl, combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until a meat thermometer reads 170°.
Yield: 4 servings.

Following. We just ordered an Instant Pot. We live full time in an RV & the IP is discussed a lot on RV groups because it's easy, replaces multiple small appliances & doesn't heat up the kitchen like the oven. Finding healthy recipes would be great!0
