Yeah - peanut butter.
I share your pain a little bit; I have to struggle to reach my goal; generally falling 4-500 short. However, I feel great. I have energy and what-not. But I have a metric-shyte-ton of weight to loose; plenty of reserve energy1 -
Add in some calorifically dense foods - peanut butter is popular - or add in another meal.
Also: note that your hunger cues are probably not reliable - My observations are that serial over-eaters and serial dieters tend to be poor in this respect.1 -

I feel your pain. As someone with chronic, stress-induced appetite issues, I have problems meeting the 1200 bare minimum. What I find sparks my appetite is physical activity - specifically, short-interval, high-intensity physical activity. But you have to be careful with that one. If it's not boosting your appetite, stop immediately. Also, cut down on your liquid intake if you're drinking more than 8 cups of water per day - water can quench your appetite in addition to your thirst.1

protein shakes grind up 1/4 - 1/2 cup old fashioned oatmeal in it add some PBFit (2 TBPS)or PB2 and some chia seed (1.5 tbsp) and a table sppon of olive oil. 1.5 cups skim milk . easily 700 + drinkable calories somewhat macro balanced at 40/40/20 (depending on your protein choice) . Drinking calories is easier than eating them and your hitting healthy fats in this one. this is pretty much my m-f breakfast food.3

I'm not eating under 1000 on purpose lol I just don't get hungry so I don't eat. Don't really think about it. I tried to pick, what I assume are, healthier options since my triglycerides were high and my A1c wasn't so great. But by doing that I guess I'm not getting enough calories? I don't know. I see my doctor this week so I'll review it with him. Just thought I'd see if anyone had any opinions0

I know. That's part of the reason I'm the weight I am. I need to find foods that are healthy for the current health problems but still give me what I need. As far back as I can remember, I've never eaten "normally". I'm either too busy or not hungry so I don't think about it.0

I cook here and there.... Right now it's just the 2 kids and myself but when my boyfriend is here there's more cooking since he eats like a cow lol we're total opposites. He eats a lot but works out and is physically active and can't gain weight. I'm lightly active and don't eat a lot and I'm overweight. Go figure0
