I would love ideas from others about great low-cal, protein-rich food options, that are easy to make. I work fulltime as well as do a number of online college classes, so I don't feel like I have the time to cook. Thank you

I've found the slow cooker to be a huge convenience when I'm too busy. If you're a meat eater, toss in a slab of lean meat and some veg and you have dinner for several meals. If not, there are many bean/grain options...
Or pick one day a week and cook two or three meals (casseroles, stews, etc), portion them out, freeze them and eat all week!1 -
When I use the slow cooker I always make 2 meals and freeze the 2nd one (before cooking it.) When I know I'm gonna be busy that night I take it out of the freezer the night before and throw it in the slow cooker in the morning.0
